Spoon Corn Bread

1 scant cup corn meal

3 cups milk

3 eggs, well beaten

1 t salt

3 level t baking powder

I rounded T butter

Stir meal into 2 cups milk, let come to a boil, stirring constantly, making a mush. Then add balance of milk, well beaten eggs, salt, baking powder and butter, melted. Turn at once into a quart size, well greased, glass baking dish. Bake in a 400 degree oven about 32 minutes or until done. Serves 6.

** I love, love that this recipe says “about 32 minutes”. Seems awfully precise, no?
